Left over taco seasoning from a previous quick week night meal tends to add something interesting to the dish and so does paprika or even crushed red pepper! Don’t forget your salt and pepper. Pop those tortillas in the microwave for a few seconds, or on the stove top and set your table! If you wanted to add some rice for an extra carb it would go delightfully! White, yellow or brown rice would be a fantastic edition but if you are trying to keep things light, brown rice may be the best choice for you! I know, I know. It’s a short cut, but a fantastic and genius one because it is so quick! You can’t blame me if it’s true and we all know it is. Picking up a rotisserie chicken at the grocery store is a sure win, without a doubt in the world. They taste fresh and flavorful, they’re cost effective, healthy and so fast to grab! There is nothing better than coming home from a long week day that lasted for a hundred years and knowing that your easy and quick week night meal will be ready in less than 10 minutes! You can serve this chicken with anything! Roasted potatoes and cranberry sauce make for a good combo on a cool winter day when you need some food to stick to your stomach! And last, but definitely not least, the leftovers are to die for! Chicken salad for lunch the next day (just shred the chicken and add mayo), homemade chicken noodle soup for next week, I mean the options are endless! You will absolutely keep winning with this dinner choice! You will not be disappointed!
3.) Pasta Aglio Y Olio and Sausage
This instant classic will bring you comfort right to the country side of Italy on a week night in no time! Simply, it is a pasta dish with olive oil, garlic and the pasta and sausage of your choosing. Start by warming the olive oil, garlic and sausage until it is cooked through. Sweet and spicy sausage are very flavorful in this super quick week night meal so choose your favorite or add in both! Meanwhile, boil some water and toss your pasta in! This recipe works well with long or short pasta but farfalle and spaghetti seem to be two favorites! Once the pasta is cooked aldente strain it and put it in a bowl with some fresh olive oil. This will help to coat the pasta and keep it from sticking and clumping up. Then pour your wonderful garlic and sausage mixture over top. The warm and room temperature olive oil will meld perfectly! Finish with a touch of basil and some grated cheese (romano or pecorino) and you have yourself a five star pasta for a quick week night meal that would rival any fancy restaurant meal!
